Matsaya is a Thai seafood restaurant built around local catches and direct relationships with small-scale fishing communities. A changing catch-of-the-day selection keeps the menu tied to what is actually available, while the chef takes familiar Thai flavors and pushes them in slightly different directions, from fried fish mousse with curry paste and makrut lime to squid in black ink sauce with pickled garlic.
